Low Carb Fried Pickles

Oops.  I already cheated today.  Such is life.  There is nothing harder to resist than a free meal.  So when that meal has carbs in it I'm not great a saying no.  We had chicken shawarma sandwiches.  They were wrapped in a big pita so I managed to just eat half the pita.  Although it was not on the low carb list it is important to make good food choices I am not going to beat myself up for the meal.  I didn't go crazy and eat half a pizza (which we certainly have been known to do when we fall off the low carb wagon).  So next up was a little snack I have been wanting to make which is fried pickles.  Hope you enjoy!





Fried Pickles:
4 Pickle Spears
1 Egg
2 T Almond milk
2 T Shredded Coconut
2 T Almond Meal

Pat pickles in a paper towel to dry them off.  Mix Egg and Almond Milk together.  I added some tabasco sause and cayenne peper. Mix shredded Coconut and Almond meal together ins separate bowl. Coat the pickle in egg mixture and then Coconut mixture.  Then heat up pan with oil.  I used some reserved bacon grease and didn't even need to fill the bottom of the pan.  Cook each side until brown and crispy on medium heat about 3 to 4 minutes on each side.

These would be great with some spicy ranch but I didn't have the foresight to make it or the patience to wait.  They disappeared very quickly.

Day Three: Always the hardest day

I have found the few times I have restarted Atkins that the third day is always the hardest.  The first time I started it I cried to Rory about how I couldn't stop thinking about food.  Now that I know how good my body can feel when I am eating low carb consistently I don't feel the same way.  Today was pretty easy to get through.   Rory didn't make it through the third day as easily but in all fairness to him he was on set at Universal so he had more temptation than I did.  

I started the day off with them stuffed french toast on zero carb bread.  Yes, I said zero carb bread.  This was something Rory and I picked up at whole foods.  I think I had set my standards a bit too high for zero carb bread.  It basically tastes like compact fiber in the shape of bread.  I mixed cream cheese with a T of backing splenda and mixed them together added blueberries coated in an egg bath of one egg, cinnamon and some almond milk.




Next time I am skipping the bread and just spreading this on a mat of bacon.  Because if your are on Atkins every meal should include bacon.

Day Two: Stocking Up for Starting Over



Egg Pizza

Pour 1/2 c. egg whites into a non stick pan

Add whatever toppings you want.
In this case I used some sage sausage I had pre cooked.

Add cheese

Flip and let set until the cheese has crisped up


I enjoy some hot sause and SF syrup on top of mine

Only one Net Carb and taste pretty good too.
One thing I have always missed with LC is beans but this seems like a nice substitute.
